The most satisfying Mango Rice Recipe ever! | Mango Chitranna Recipe | Mavinakayi Chitranna
Ingredients:
2 tbsp oil
1/2 tsp mustard seeds
1 tbsp chana dal
1/2 tbsp urad dal
4 tbsp peanuts
1/4 tsp hing / asafoetida
Few curry leaves
5 green chillies, slit
1/4 tsp turmeric powder
Salt to taste
1 cup raw mango, peeled & grated
2 cups cooked rice
3 tbsp fresh coconut, grated
3 tbsp coriander leaves, finely chopped
Method:
Heat oil in a large pan over medium heat.
Add mustard seeds and let them splutter.
Add chana dal and urad dal. Sauté until they turn golden brown.
Add peanuts and roast them until crisp.
Once peanuts are crispy, add curry leaves, green chilies, and ginger. Sauté for a minute.
Add turmeric powder and mix well.
Add grated mango and sauté for another minute. Season with salt.
Cover the pan and cook the mango on low heat for 2-3 minutes or until it shrinks slightly.
Now add the cooked rice to the pan and gently mix without breaking the rice grains.
Cover the pan and simmer the rice for 1-2 minutes to allow the flavors to meld.
Finally, add grated coconut and chopped coriander leaves. Mix well.
Serve hot and enjoy your delicious mango rice!
